Sambar Podi

Ingredients:

Coriander seeds 1 cup
Whole pepper 1/4 cup
Jeeragam (Jeera) 1/4 cup
Channa dal (kadalla paruppu) 1 Tablespoon
Rice 1 Tablespoon
Vendhayam 1/4 teaspoon
Curry leaves a handful
Red dry chili 2 cup

Method:
  • Fry all the ingredients separately in a frying pan.
  • Cool the content.
  • Grind it into a powder in mixcy or grind it in a mill.
Store it in a air tight container.

Idli Podi


Ingredients:

Urid dal 200 gms
Garlic pods 2
Tamarind small piece
Dry Curry leaves a handful
Asafoetida a pinch
Dry red chili 200 gms (As needed)
salt

Method:
  • To a kadai add urid dal and fry it along with garlic.
  • Add dry red chili, curry leaves, asafoetida and fry for 2 to 3 minutes.
  • Finally add tamarind and fry for a while.
  • Cool the content.
  • Add the content to a mixcy and add salt.
  • Grind it to powder in a mixcy.
Add nalla ennai (Gingerly Oil) or coconut oil to the podi and have it with dosa or idli.

Easy (123) Rasam Powder

Ingredients:

Whole Pepper 200 gms
Jeeragam 100 gms

Method:
  • Add these to mixcy and make it into a fine powder.
  • Rasam powder is ready.

Garam Masala


Ingredients:

Cloves (Krambu or Lavangam) 50 gms
Cinnamo (Pattai) 50 gms
Annasi Poov (Star Anise) 50 gms
Cashew nut 100 gms
Kasa Kasa (
Poppy seeds) 100 gms
Jeeragam (Cummin seeds) 100 gms

Method:
  • Fry each item separately in a frying pan ( no need to add oil).
  • Then cool the spices after frying it.
  • Grind all the spices together in a mixcy.
  • Garam masala powder is ready.
Homemade aromatic garam masala is ready....it gives a special taste when added to the dishes.
